INGREDIENTS
12 eggs
Flour (for dusting/toasting if used)
Sugar (small amount to lightly sweeten filling)
Bread slices (soft white or milk bread)
Butter (softened)
Mayonnaise (optional, for creamy egg filling)
Salt & pepper
Fresh herbs
INSTRUCTIONS
- Prepare the eggs – Bring a pot of water to boil and cook the eggs (hard-boiled or slightly jammy depending on preference). Then chill and peel them.
- Make filling – Chop or mash the eggs in a bowl, add sugar, a pinch of salt & pepper, and mayonnaise if using. Mix until creamy.
- Toast or prepare bread – Lightly butter the bread slices on one side. Optionally toast just until lightly crisp.
- Assemble the sandwich – On the buttered side of one bread slice, spread the egg filling evenly. Top with another slice of bread, buttered side up (or down depending on your toast). Press gently.

Cut & serve – Slice the sandwich (diagonally or down the middle) and add crushed Yay's beef crisps. Serve immediately and enjoy while fresh.
