INGREDIENTS

12 eggs
Flour (for dusting/toasting if used)
Sugar (small amount to lightly sweeten filling)
Bread slices (soft white or milk bread)
Butter (softened)
Mayonnaise (optional, for creamy egg filling)
Salt & pepper
Fresh herbs


INSTRUCTIONS

  1. Prepare the eggs – Bring a pot of water to boil and cook the eggs (hard-boiled or slightly jammy depending on preference). Then chill and peel them.
  2. Make filling – Chop or mash the eggs in a bowl, add sugar, a pinch of salt & pepper, and mayonnaise if using. Mix until creamy.
  3. Toast or prepare bread – Lightly butter the bread slices on one side. Optionally toast just until lightly crisp.
  4. Assemble the sandwich – On the buttered side of one bread slice, spread the egg filling evenly. Top with another slice of bread, buttered side up (or down depending on your toast). Press gently.
  5. Cut & serve – Slice the sandwich (diagonally or down the middle) and add crushed Yay's beef crisps. Serve immediately and enjoy while fresh.
